Apricot bliss balls
Make a large batch of these bliss balls and store them in the freezer. If you were wondering, the ingredients also contain a range of health promoting properties. Their claims to fame include:
apricots - May improve skin health due to the high levels of Vitamin C and E. These vitamins helps build collagen, which gives your skin strength and elasticity. Look for natural dried apricots when possible without added sugar, oils or sulphur dioxide (E220), which is added as a preservative, that some people may be sensitive too.
cashews - high in magnesium which is important for muscle relaxation and bone health
almonds - one of the best sources of vitamin E, which helps protect your cells from oxidative damage and support healthy ageing
chia seeds - high in fibre which is very important for bowel health, colon health and
oats - proven ability to reduce LDL (bad cholesterol) and improve gut bacteria. Sorry to say one of these bliss balls won’t over-ride a health diet though!
coconut flakes - contains zinc which supports the immune system, and plays a critical role in wound healing.
Now that we are familiar with the health benefits, I know that they will taste much better too!
Ingredients
½ cup apricots
1 cup cashews
1 cup almonds
¼ cup chia seeds
1 cup rolled oats
¼ cup desiccated coconut flakes
1 tbsp water or coconut water as needed to form a sticky ball
Method
Blend all the ingredients except for the desiccated coconut and water in a food processor, blender or by hand until it is chopped finely.
Stir through the coconut.
Finally add the water or coconut water slowly once blended. Add the water slowly until the mixture feels wet enough to make a ball but not too gooey…less is more!
Take large teaspoons of mixture and roll into balls using your hands, then roll the mixture into coconut flakes to serve. If you want to make it without feeling too sticky on your hands, grab a pair of gloves and roll away.
Variations
You can mix through your favourite choice of ingredients such as goji berries, dates, flaxseeds, cashews, brazil nuts, sesame seeds, and cacao nibs or powder.
