An Asian tropical holiday breakfast disguised as a mango chia seed pudding

This dish tastes like a tropical holiday in a cup. The combination of the mango, coconut and lime has a daiquiri feel without the hangover or guilt for enjoying this at breakfast.

The chia pudding can be made in advance for a quick breakfast, snack or desert.

If you are not familiar with the nutritional power house of these tiny chia seeds, they are high in omega 3, protein, antioxidants and fibre. Soaking them helps the seed expand which is though to increase satiety.

Ingredients:

  • 1/4 cup of chia seeds

  • 1 cup of coconut, almond or nut milk

  • Β½ cup of mango sliced

  • 1 tbsp coconut flakes for topping

  • 1/2 lime

Mix

Chia seeds with coconut milk and leave to soak overnight or for approximately 20 minutes

When ready to serve add mango, coconut and a squeeze of lime.
