Not so Anzac Cookies

It was initially believed Anzac biscuits were sent to soldiers on the front line as the ingredients have a long shelf life and survived the travel distance.

An updated version suggests that they were baked during wartime to raise funds for returning soldiers.

Regardless of their beginnings, the legacy, the recipe and the connection to the ANZAC’s has lived on.

Baking Anzac cookies has become a way to celebrate and commemorate all Australian and NZ soldiers who have served during wartime, past and present.

This recipe is a modern dairy-free version (which I’m sure would still sell out at a bake stall!).

Instructions:-

Preheat oven to 180 fan-forced.

Ingredients:-

  • 1 cup of oats

  • 1 cup of almond meal (or SR flour)

  • 1 cup of desiccated coconut

  • 4 tbsp of maple syrup

  • 1/4 cup of olive oil

  • 2 tbsp of boiling water

  • 3 tbsp of sultanas (optional)

Method

Add all ingredients together and mix well.

Line an oven tray with baking paper.

Spoon a tablespoon size ball onto a baking tray.

Flatten biscuits gently with a fork

Bake for approx 15 mins at 180

To serve

Biscuits should be hard and chewy when you take them out of the oven.

Let cool and enjoy within two weeks

Makes approximately 12 biscuits
