Very green Greek salad

This salad is a little bit Greek, a little bit green and a lot of delicious!

Ingredients

  • 50g haloumi cut into thick triangles or wedges

  • 1 medium Lebanese cucumber, diced

  • 2 medium tomatoes or 12 cherry tomatoes diced

  • ½ red capsicum, diced

  • 1 medium red onion, thinly sliced

  • 2 cups rocket or spinach

  • ½ avocado, diced

  • 1 tbsp pumpkin seeds

  • 6 sprigs continental parsley

    Dressing

  • 1 tsp EVOO (Extra Virgin Olive Oil)

  • ½ tbsp balsamic vinegar

Method

To grill the haloumi place in a fry pan on the over on a medium heat. Add the EVOO and warm.

Add the haloumi and grill for two minutes on each side. Set aside. (alternate methods to cook the haloumi are on the bbq or in the over for around 7 minutes.

Prepare the salad ingredients and place in a large bowl. Top with the haloumi.

Combine dressing ingredients in a bowl and whisk before adding to salad. Toss to combine and serve topped with parsley and pumpkin seeds.

Tip

Serve with pita bread.

Add chickpeas, fried egg or chicken for an extra serve of protein.
