Two ingredient banana pancake
These protein and potassium filled pancakes are perfect when you are short on time and ingredients.
Ingredients:
2 eggs
1 banana
Extra virgin olive oil , butter or coconut oil for cooking
Mixed berries or sliced fruit of choice to serve
Method
Mash the banana in a bowl until you have a smooth consistency.
In a separate bowl whisk the eggs together until egg and yolk is combined.
Combine with the banana mixture and stir through
To cook
On a medium heat add oil to a fry pan.
Add approximately 2 tbs of the mixture to the fry pan to form a circle. . After approximately one minute or once browned flip over the pancake and cook on the other side.
Serve with berries or choice of topping.
