A little bit fancy muesli parfait with berries

I LOVE.breakfast. Let me tell you why….

  • Breakfast is quick and easy to whip up

  • There is a much lower chance of overcooking or burning breakfast (hopefully)

  • Simple flavours and ingredients work really well together. Hello avocado on sourdough with sea salt and lemon.

  • Breakfast is easily accessible. We normally have breakfast ingredients in the fridge or cupboard ready to go

  • Brekkie, if you are like me, can be eaten at any time of the day

Muesli Parfait

If you are a breakfast lover too, making your own muesli gives you control over how much sugar content is in your breakfast. Breakfast is one of the biggest cereal offenders (yes, pun intended!) when it comes to hidden sugar. Ideally look for less than 10 grams of sugar per 100 grams or less.

Ingredients:

  • 1 cup of rolled oats

  • 1/4 cup of sliced apricots or dates or sultanas

  • ¼ cup of slivered/sliced almonds

  • ¼ cup of chia seeds

  • ¼ cup of coconut flakes

  • Yogurt (i use natural pot set yogurt which is lower in sugar)

  • Berries or fruit of choice

Method           

Combine: the dry ingredients with the dried fruit to make the muesli. Mix evenly and set aside

Add the layers

  • place two tablespoons of the berries or fruit of choice at the bottom of a clear glass.

  • next add two table spoons of the dry mixture (or granola).

  • add 2 tablespoons of yogurt on top of the dry mixture, repeat if you have a big glass!

  • Top with fruit and a sprinkle of the muesli mix

Gluten free option – replace oats with puffed amaranth or quinoa flakes

Dairy free option – use coconut yogurt

Tip: You can swap the dry ingredients and use your favourite granola instead (pictured)
