Simply soba - chicken and soba noodle salad

Sometimes the simple things are the best

Soba or buckwheat noodles quick and easy to prepare. They are a healthy noodle option with loads of protein and fibre while being lower in carbohydrates and calories. Don’t worry, they taste great too and soak up the flavours in the dish.

I also prefer soba noodles (4 minute noodles), compared to traditional “two minute” noodle varieties as they are lower in sodium and preservatives.

 Ingredients:

  • 100 grams of Soba noodles

  • 2 x grilled chicken thigh cut in slices or tofu

  • 1/2 avocado diced

  • 1/2 red capsicum sliced into thin strips

  • 1 x carrot sliced into this strips

  • 1 tbsp sesame seeds

  • 2 tbsp of coriander thinly chopped

Dressing:

  • 1 tbsp olive Oil

  • Juice of half a lime

  • 1 tbsp Tamari or soy sauce

 Method:

Add olive oil and add to pan on medium heat.  Add chicken (or tofu) and tamari/soy sauce. Grill over a medium heat until cooked.  Remove from heat.

While this is cooking bring water to boil and cook soba noodles. Drain and set aside.

Combine cooked chicken or tofu with the soba noodles, Mix through the avocado and salad ingredients.

Top with sesame seeds, a squeeze of lime juice and coriander and stir through

Vegetarian option - substitute chicken for tofu or tempeh
